I want to tell you a little more about me and my health and why I have chosen a low carb way of eating for life. A couple of years ago I got ill and went to the hospital with a gastroenteritis. After one week of treatment I could go home but still felt sick. Next to the pain of the gastroenteritis I had a gastric flu and after another couple of days I went to see my family doctor because I knew that something wasn’t right. He gave me some medicine and checked everything the hospital said but still couldn’t figure out why I was still feeling so sick. I told him the hard facts: every time I ate something I had to run to the toilet within a 5 to 10 minute timeframe.

He suggested more tests and did a blood analysis before calling me back two days later. He told me that something has gone wrong because the results were something that he had never seen before and when the results would be reliable I would be allergic to 95% of all groceries. He asked me to come back to his office for a new blood analysis and the results came back to days later – again with the same results. The hospital treated me wrong and my body reacted with allergies – those bad news changed my life.

I was 21 years old, I had lost almost 10Kg within 3 weeks, gained 25Kg within the next 4 weeks and I was in almost constant pain. The following years were more or less the same, gaining weight, losing weight, daily painkillers and only 4-5 groceries I could eat without having any problems. I wasn’t happy so I wanted to change it. I tried to learn as much as I could about health, nutrition and alternative options of eating. When I moved to California I decided to try to eat low carb to lose some weight and I immediately felt better. I googled about the benefits of a low carb diet and came along an instagram account which was dedicated to the keto diet.

The health benefits of a life without carbs and sugar seemed enormous so I gave it a try for initial 4 weeks. After 2 weeks I was completely pain-free after years with a total of 10 pills daily… there was no reason for me to go back. I still live and love keto / low carb (I have a cheat meal every now and then) – that’s the reason why I have so many low carb and healthy recipes on this blog.
